Jalapeno Roasted Corn on the Cob

When the great sweet corn comes to the farmer’s market we get really excited and fire up the grill. This is a simple and delicious way to cook corn. The jalapeno gives it just the right amount of spice and the grill caramelizes to make the corn even sweeter. Best of all if you put a meat and packet of veggies on the grill with it you never have to turn on the stove!

Jalapeno Grilled Corn

Jalapeno without seeds gives it just the right spice and the grill makes it even sweeter.

Ingredients
  

  • 4 ears fresh corn, shucked and silked
  • 5 tbsp salted butter
  • 1 fresh jalapeno, seeded and chopped finely
  • salt and pepper to taste
  • aluminum foil
  • 4 tsp water

Instructions
 

  • Let butter come to room temperature and add in chopped jalapeno.
  • Mix with a fork or whisk until smooth.
  • Place corn on enough foil to cover in one layer of wrap and coat with butter. Sprinkle with salt and pepper.
  • Pull up sides of foil and add 1 tsp of water to each then wrap tightly, twisting the ends.
  • Place on a 400 degree grill for 20 minutes. Rotate every 5 minutes to cook evenly. Be careful when opening the steam is very hot.
