Apple Arugula Goat Cheese Salad

Creamy goat cheese, crisp fresh picked NJ apples, bittersweet arugula, nuts and cranberries make this a fantastic fancy lady lunch at home!

Ingredients
  

  • 2 ounces fresh rocket aka arugula
  • 1/2 chopped, crisp apple
  • 1 oz goat cheese, crumbled
  • .5 oz chopped nuts, walnuts, pecans, or almonds
  • .5 oz dried cranberries

Dressing

  • 1 tsp fresh lemon juice
  • 1 tsp good olive oil
  • 1/4 tsp honey
  • 1/4 tsp dijon or brown mustard
  • enough salt and pepper to mix throughout the salad

Instructions
 

  • Load everything in the salad but the goat cheese in a large bowl.
  • Mix dressing ingredients in a small salad dressing container and shake to emulsify. I use portable dressing containers because it is just the right amount and I need them sometimes to take my own garlic free dressing to restaurants.

  • Toss the salad in dressing and top with cheese.

Notes

Use crisp and sweet apples such as honeycrisp, jonagold or gala.
I use Primal Kitchen Organic Spicy Brown Mustard because it doesn't have garlic, allergic.
Always buy the log of goat cheese and crumble, the predone stuff is dry
