Mountain Apple Cake
This super moist cake is not only delicious but has a great story to go with it. Some lil mountain lady has probably had this recipe for generations. It freezes beautifully if you want to save some for later or Turkey Day!

- 3 eggs
- 1½ cups oil
- 2 cups sugar
- 3 cups flour
- 1 tsp salt
- 1 tsp baking soda
- 2 tsp cinnamon
- 2 tsp vanilla
- 1½ cup chopped pecans
- 3 cups chopped apples
Hot Topping
- 1 cup brown sugar
- ½ cup milk
- ½ cup butter (1 stick)
Heat oven to 350 °F
Mix eggs, oil, and sugar in a large bowl. Mix dry ingredients in another bowl.
Add the sugar mixture and vanilla to the dry ingredients.
Stir in the apples and nuts.
Pour into the tube pan and bake for 1 hour.
Hot Topping
Melt butter in a small saucepan. Add sugar, vanilla and milk and stir.
Bring to a slow boil until slightly thickened.
Poke small holes in the cake with a toothpick and slowly pour topping over cake.
Let cake cool completely before serving.
Add whipped cream or ice cream or dust with powdered sugar to serve.
