Parisian Lunch Tomato Tartine

Delicious open faced sandwich is so typically Parisian cafe! Beautifully light and satifying.

Ingredients
  

  • 1 slice good quality bread
  • 1 slice big ripe fresh tomato
  • 2 oz shredded cheese, gouda, gruyere, or white cheddar goat cheese is also good but spread it under the tomato and top with a harder cheese
  • 1 tbsp chopped herbs, basil or parsley
  • 2 cups salad greens
  • 1 tbsp fresh lemon juice
  • 2 tbsp good olive oil
  • pinch salt and pepper

Instructions
 

  • Toast the bread lightly on each side under the broiler on high.
  • Remove the bread and place on foil lined pan. Put tomato on the bread and cover with cheese. Return to the oven and broil until cheese is golden and bubbling.
  • Meanwhile, add lemon juice, olive oil, salt and pepper to a small container with a lid. Shake until emulsified. Place greens in a bowl and toss with dressing.
  • Serve sandwich with the salad and top with herbs. Don't forget the glass of Sauvignon Blanc to go with it! Bon Appetit!
