Cherry Tomato Caprese Salad
Caprese salad is a favorite but this one has a twist. My veggie monger, Ronnie, at the local farmer’s market has the sweetest, most tender cherry tomatoes. I love this salad for it’s freshness and simplicity! Even if you can’t get farm fresh tomatoes, the fresh basil pulls through an overwhelming taste of summer. This salad works with any summer meal of grilled fish, chicken or steak. Prepare it ahead adding the dressing just before serving. Grill corn along with the protein and you can enjoy your guests outside.
Cherry Tomato Caprese Salad
Simple and fresh flavors make this salad the perfect summer side!
Ingredients
- 2 pints fresh cherry tomatoes, halved, multicolored make it pretty
- 1 8 oz container of small mozzarella pearls
- 1 tbsp fresh lemon juice
- 2 tbsp balsamic vinegar, preferably a thick glazy one
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 cup chopped fresh basil
Instructions
- Combine tomatoes, mozzarella pearls and basil in a serving bow. Pour oil, vinegar, lemon juice, salt and pepper in a small container with a lid. Shake to emulsify the dressing and toss with the tomato mixture. Serve immediately. Can be stored for up to an hour or make ahead and toss with the dressing just before serving.
