Grilled Teriyaki Veggies on Fire Wire
Nothing says summer like the smell of a grill! Serve over couscous or quinoa and it’s the perfect dish for your vegetarian guests. Pairs great with grilled fish or chicken as well.
Grilled Veggie Kabobs on Fire Wire
Homemade teriyaki sauce with grilled vegetables make for a yummy summertime side dish.
Equipment
- gas or charcoal grill
- Fire Wire skewer or bamboo skewers
Ingredients
- 1 zucchini squash
- 1 bell pepper or 6 minis, caps and seeds removed
- 1/2 lb mushrooms
- 1/2 lb grape tomatoes, the larger the better so not to overcook
- homemade teriyaki sauce see recipe notes
Instructions
- Cut zucchini at least 1 inch thick.
- Thread the veggies alternately onto a fire wire or bamboo skewers.
- Prepare grill. If using a gas grill heat to 400 degrees. If using charcoal spread coals when gray but still fiery. Let flames subside and add kabobs to the grill.
- Baste and turn occasionally. Making sure to get teriyaki on all sides.
- Cook until beautifully browned and zucchini seems tender. About 20 minutes. If using the fire wire remove with caution before serving as the wires stay hot.
- Serve over rice or couscous with extra sauce to dip.
Notes
