Sundried Tomato Tapenade

Super fresh and easy tapenade! You can use this for so much, bruschetta bar, pasta sauce, in a omelet, or even on a pizza. Use either dried or oil packed sun dried tomatoes. I prefer the dried because the store for longer and I can add my choice of quality olive oil to them.

The combination of fresh and dried tomatoes makes this amazing for a bruschetta bar, pizza or pasta.

  • small chopper or blender

Ingredients
  

  • ½ cup sundried tomatoes, dried or in oil If you use in oil drain them well.
  • 1 cup fresh cherry or grape tomatoes
  • 3 tbsp good quality extra virgin olive oil
  • ½ cup chopped fresh basil
  • 1 tsp minced garlic, optional

Instructions
 

  • Add all ingredients in the small chopper and pulse until coarsely blended. If too dry add more EVOO.
